Ingredients 1 cup Glutinous Rice, cooked
2 tbsp Coconut Milk
1 tsp Grated Orange Rind
2 tsp Sugar
4 Strawberries, sliced and quartered
8 Mandarin Orange Sections
1 Kiwi, sliced and quartered
8 Red or Green Grapes, sliced

Indoor Preparation Prepare glutinous rice (or sushi rice) with water according to package directions. Add coconut milk, grated orange rind and sugar to taste.
Please note: do not store prepared rice in the refrigerator, as it will become hard and unmanageable. Form into small "football" shapes and place on presentation platter.
Cut fruit into small pieces (small items like Mandarin orange sections may fit on rice without being cut down in size), and arrange on top of rice rounds.
If preparing ahead of time, cover platter with plastic wrap and sit at room temperature.
