Guacamole with Pico de Gallo

Ingredients 1/2 Jalapeno Pepper, chopped
1/2 Cooking Onion, chopped
2 tbsp Coriander, chopped
Pinch Salt
2 Avocados, ripe
1 tbsp Lime Juice
Ingredients for Pico de Gallo:
1 large Tomato
1/2 Onion, chopped
Pinch Coriander, chopped

Indoor Preparation Mash the jalapeno, onions, coriander and salt with potato masher or a mortar and pestle until puréed. Do not use blender to mix ingredients. Skin avocados. Mash avocados into mixture. Add lime juice. Combine ingredients for Pico de Gallo. Sprinkle a little bit of "Pico de Gallo" on top of the guacamole.
Alternative Side Dishes
Serve with a basket of tortilla chips on the side with tacos and/or refried beans.
