How Much to Buy
If you are cooking boneless cuts, you will need approximately ¼ to 1/3 of a pound (about 4 - 5 ounces) per person. If you are
cooking steak, such as a T-Bone, you should get about 1/3 to ½ lb. (5-8 ounces) per person. Don't forget to account for your teenage
nephew who eats enough for three!
Which Cuts to Choose
The best cuts of beef to barbeque are tenderloin cuts, such as Filet Mignon, Chateaubriand, New York Strip, Sirloin Steak, T-Bone Steak,
Porterhouse, Rib-Eye Steak and Top Round.
Perfect Steak 101
Choose steaks that are no thicker than 1 1/2 inches, and which have some visible fat marbling for tenderness. If desired,
marinate for 3-24 hours. To keep the juices intact, use tongs rather than a fork to turn your meat. Turn your Fiesta barbeque to "High"
and sear for 1-2 minutes per side. Then lower the heat to medium and cook for about 4 minutes per side for rare (it will feel fleshy to touch),
6 minutes per side for well done steak (it will feel firm). When turning the steak, make sure you rotate it 90 degrees each time to create those
restaurant style dark grill lines.
