Grilled Pineapple with Berries and Creme Fraîche

Ingredients 1 whole Pineapple, cored and cut into thick slices
2 cups Creme Fraîche, or whipping cream as a substitute
1 cup Port Wine
Sugar, to sprinkle
Icing Sugar, to garnish
4 sprigs Fresh Mint
Assorted Berries

Indoor Preparation Cut pineapple in half. Core one half of the pineapple and reserve for serving. Peel and core remaining pineapple. Cut into chunks.

Outdoor Preparation Sprinkle with sugar and grill on a very hot grill. Watch carefully not to burn pineapple as the sugars caramelize very quickly.
After pineapple slices have been marked, fill pineapple cavity with creme fraîche and berries. Garnish with mint and drizzle with Port and icing sugar.
