Grilled Scallops with Roasted Pepper and Basil Mayonnaise

Ingredients 1 1/2 lbs Large Scallops, fresh or thawed
2 tbsp Freshly Chopped Herbs (dill, basil and/or oregano or tarragon)
2 tsp. Canola or Vegetable Oil
2 tsp. Fresh Lemon Juice
Salt & Pepper
Ingredients for the Roasted Red Pepper and Basil Mayonnaise:
2 large Red Peppers, skinned, peeled, and seeded
1 cup Homemade or Prepared Mayonnaise
2 tbsp Fresh Chopped Basil
Salt & Pepper to taste

Indoor Preparation Divide Scallops evenly into four portions. Skewer each portion onto a pre-soaked wooden skewer. (Soaking skewers for a minimum of 15 minutes helps to prevent them from burning.) Rub the seasonings and herbs on the scallops.

Outdoor Preparation Grill the scallops just until they lose their transparency--about 4-6 minutes.
Serve immediately with Roasted Red Pepper and Basil Mayonnaise.
To make the Red Pepper and Basil Mayonnaise:
Grill the red peppers on Medium-High. Let cool and remove skin.
Purée the peppers in a food processor or blender.
Blend in the remaining ingredients.
