How Much To Buy
You'll need about 6-8 ounces of fish per person if you are buying fillets. If you are buying a whole fish, take into account that
only part of it is edible, so you'll need to plan on about 8-12 ounces per person.
Shellfish
Did you know that you can cook shellfish on your barbeque. If they are large (lobster, prawns, crab) you can grill them directly on the grid, or you can skewer smaller shellfish (mussels, clams, oysters, scallops, shrimp) or cook them in a basket. Shrimp take about 8-12 minutes depending on their size, while oysters take about 5 minutes.
Selecting Fish and Seafood
Fish of all kinds is great for the barbecue, but just make sure it is fresh. If buying a whole fish, the skin should be firm and springy to the
touch and the eyes should be clear and protruding. Because gills fade over time, look for bright pink colouring. If the fish has a strong
odour, it is definitely not fresh.
For fillets, look for firm texture and translucent uniform colour. Also, don't let your fish come into direct contact with water or ice, which
will break down the flesh. Just like fish, shellfish are highly perishable. There should be no strong odours and the flesh should not be slimy.
Perfect Fish 101
Firm-textured fish, such as halibut, swordfish, grouper or tuna, are the best for direct grill barbequeing. Fish cooks quickly, so cook it on
medium for about 8 to 12 minutes for fillets, and about 10 minutes for 1" thick steaks. Remove it from the heat as soon as it turns opaque
and flakes easily with a fork. If fish is frozen, brush with oil & double grilling time.
