Spinach and Goat Cheese Chicken Rolls with Grilled Vegetables

Ingredients 1 tbsp Olive Oil or Butter
2 cloves Garlic, minced
1 bunch Fresh Spinach Leaves
4 Chicken Breasts, boneless and skinless
4 oz. Goat Cheese
1 Red Pepper, roasted, peeled & cut into strips
1 Yellow Pepper, roasted, peeled & cut into strips

Indoor Preparation Butterfly and flatten each chicken breast by pounding with a meat cleaver. Sauté garlic in olive oil or butter for 1-2 minutes. Add spinach and cook until wilted. (This can be done in a non-stick skillet on the grill, or indoors.)
Lay a thin layer of wilted spinach onto the chicken breast with the goat cheese and a couple of pieces of each red and yellow pepper slices.
Roll up chicken and bind with toothpicks, skewers or string.
