Buying Poultry
For chicken or turkey with bones, you should buy about a pound per person. Duck or goose have a lot of fat that will drip away
during cooking, so you should allow about a pound and a half per person. If you are cooking boneless poultry, such as chicken breasts,
about 1/3 -1/2 pound (5-8 ounces) per person should be enough.
Heart Smart Tips
Chicken and turkey are usually quite lean and low in cholesterol, particularly if you choose white meat, such as the breast, and remove
the skin before you cook it.
Perfect Rotisserie Chicken 101
Use the Rear Rotisserie Burner on your Fiesta BBQ for an exceptionally moist and tender chicken. Because the chicken is in
constant motion, it will cook more evenly. A rotisserie chicken will be more moist than a roasted one. We recommend placing a
heavy duty disposable foil drip pan with herbs, juice or wine directly beneath the rotisserie to catch any drippings, eliminate basting
and add flavour. A 5 lb. Chicken requires about 2 hours of cooking. The internal temperature should be 83°C (180°F).
