Grilled Portobello Mushroom and Snow Pea Salad

Ingredients 1/2 lb Snow Peas
4 tbsp Unsalted Butter
3 Cloves Garlic, sliced
1 Lemon, juice only
1/4 cup White Wine
6-8 large Portobello Mushrooms
Salt & Pepper
Ingredients for Salad Dressing:
1/2 cup Extra Virgin Olive Oil
2 tbsp White Truffle Oil--delicious but optional--you may substitute olive oil
1 Lemon, juice only
Salt & Fresh Pepper

Indoor Preparation For dressing, whisk together in a bowl: truffle oil, lemon juice, olive oil, salt & pepper. Set aside. Blanch snow peas for 60 seconds. Drain, pat dry and set aside.
In a saucepan, melt butter over medium-high heat.
Add sliced garlic and whisk together. Add a few drops of lemon juice and 1/4 cup white wine. Reduce slightly.
Brush mushrooms with butter sauce and grill whole, turning them over when well marked. Baste them with the butter sauce frequently. Season with salt and pepper and remove from grill. Slice. Place the mushrooms in the centre of the snow peas and drizzle with dressing. Serve immediately.
