Roasted Pepper and Cucumber Salad

Ingredients 4 Red Peppers, roasted on grill and peeled
1 large Cucumber
Ingredients for the Vinaigrette:
4 tbsp Whole Grain Mustard
1 tbsp Dijon Mustard
3/4 cup Olive Oil
4 tbsp Vinegar
1 tsp Honey, to taste
1 Lemon, juice only
1 Lime, juice only
2 Oranges, juice only
2 Grapefruits, juice only

Indoor Preparation Roast peppers, peel* and remove all seeds. Slice cucumber and peppers. Combine all ingredients for vinaigrette, whisking to blend. Add honey to sweeten, and add to cucumbers and peppers.

Outdoor Preparation CookingTips
*After peppers have been charred on the grill, place them in a large bowl and cover with plastic wrap (or put in a large, clean plastic bag). The hot steam will circulate in the plastic and the skins will peel off more easily.
