Tomato and Shiitake Mushroom Salad with Sherry Dressing

Ingredients 5 Shallots, sliced
1 medium Tomato, sliced
1 tsp Freshly Ground Pepper
1 tsp Sherry Vinegar
1 cup Olive Oil
1 bunch Chives
1 sprig Coriander
1/4 cup Parsley
1/4 cup Thyme
8 Shiitake Mushrooms
2 tbsp Balsamic Vinegar
Salt & Pepper

Indoor Preparation Slice three shallots and mix with sliced tomato, pepper, sherry vinegar, 1/2 cup of olive oil, chives, coriander, parsley and thyme. Keep at room temperature. Combine 2 tbsp of remaining olive oil with remaining 2 shallots, salt & pepper. Slice mushrooms (discard stems) and add to the mixture.
