Lemon & Thyme Braised Yukon Gold Potatoes

Ingredients 4 Yukon Gold Potatoes
1/4 cup Lemon Juice
4 sprigs Thyme
1 clove Garlic, chopped
1/2 cup Olive Oil
1/2 cup Red Onion, chopped
Salt & Pepper
Water
Optional:
Jalapeno Pepper, chopped

Indoor Preparation Place uncooked potatoes on individual pieces of tin foil with the sides rolled up a little bit. Slice each potato several times, and pour lemon juice inside each opening. Garnish each packet with a sprig of fresh thyme, garlic, salt & pepper, olive oil, a bit of water, diced red onion and jalapeno pepper (optional).

Outdoor Preparation Place potatoes on upper rack of grill. Cooking time for uncooked potatoes is about 15 minutes; parboiled potatoes (about 5 minutes) will take about 20 minutes to cook on the grill. Take foil packages off the grill when ready, remove the foil, and serve as an accompaniment to any hearty dish.
