Ingredients 6 oz. Pinto Beans
1/4 cup Vegetable Oil
1/2 Onion, chopped
1 Jalapeno Pepper, thinly sliced
1 tsp Salt
1/2 tsp Black Pepper
1/2 cup Feta cheese, crumbled

Indoor Preparation Cook fresh pinto beans in boiling water for 15 minutes. They should be soft when done (or, buy already cooked; rinse and dry well).

Outdoor Preparation Heat oil in frying pan over medium heat. Add onions and jalapeno peppers, salt and pepper, and sauté until soft. Add cooked pinto beans to the mixture and sauté for 2 minutes. Using a potato masher, pureé. Serve with a sprinkle of feta cheese on top and serve with tortilla chips on the side.
