Grilled Eggplant with Roasted Garlic & Chevre

Ingredients 5 cloves Garlic
4 oz. Chevre/ Goat Cheese
1 large Regular Eggplant or two smaller Japanese Eggplants, sliced lengthwise
Olive Oil, for basting both garlic and eggplant

Indoor Preparation Peel and toss garlic in olive oil, wrapping loosely in foil.

Outdoor Preparation Place the packet on a medium-high grill (with BBQ lid closed) for approximately 10 minutes or until garlic is softened. Allow garlic to cool in foil.
Puree the garlic in the food processor; add room temperature goat cheese and mix further until blended.
Drizzle olive oil lightly over long slices of eggplant.
Grill on medium-high until marked and slightly softened.
Take eggplant off grill and spread garlic-goat cheese mixture on slices. Serve warm.
