Couscous Pilaf

Ingredients 1 cup Couscous
2 cups Boiling Water or Chicken Stock
1 tsp Salt
3 tbsp Olive Oil
1/2 cup Chopped Onion
1/2 cup Finely Chopped Carrot
1/2 cup Finely Chopped Leek, white part only
1 can Chick Peas, drained
1 tsp Ground Cumin
1 tsp Turmeric

Indoor Preparation Place the couscous in a large bowl. Pour boiling water or stock over couscous and add salt. Cover the bowl tightly with aluminum foil and leave for five minutes.
While the couscous is cooking, sauté onion, carrot and leek in olive oil. When onion mixture is almost done, add chick peas, cumin and turmeric and cook for one minute.
Remove foil from bowl and fluff couscous with a fork. There are sometimes balls or clumps of the grain, but just gently separate them with your fingers. Add the vegetable mixture and gently toss with the grain.
