Wild Rice with Vegetables in a Vinaigrette

Ingredients 1/2 cup Wild Rice, cooked
3 Colourful Peppers, grilled and sliced
1/2 Onion, grilled and chopped
Ingredients for the Vinaigrette:
1 tbsp Vinegar (or substitute raspberry vinegar, lemon juice, orange or grapefruit, etc)
1 tbsp Dijon Mustard
4 tbsp Olive Oil
Chopped Garlic
Crushed Black Peppercorns
Pinch Salt

Indoor Preparation Grill peppers and Onions.
Add cooked rice to peppers and onions. Toss with vinaigrette.
